- 1 jar pizza sauce

Instructions
- Heat oven to 400-degrees F.
- Chop cauliflower into florets and place on one end of a large baking sheet.
- Drizzle with 1 Tbsp. olive oil and season to taste with salt.
- Wash potatoes. Make 1/4-inch slices into potatoes, not cutting all the way through so the bottom stays intact. Make one slice in the opposite direction, not cutting all the way through.
- Place potatoes next to the cauliflower. Drizzle with 1 Tbsp. olive oil.
- In a large bowl, mix ground beef, egg, milk, oats, 1/2 cup cheese and seasoning. Mix until well combined.
- Place meat mixture in a round on the baking pan.
- Top the meat with 1 cup pizza sauce.
- Bake for 45 minutes.
- Remove pan from the oven.
- Open potatoes slightly and add seasoning (salt, garlic onion, basil, oregano to taste), a spoon of pizza sauce, and a sprinkle of shredded cheese.
- Top meatloaf with extra pizza sauce, 1 cup shredded cheese, and pepperoni.
- Return pan to oven. Bake 15-20 minutes, until cheese is melted and pepperoni is getting crisp.
- Serve immediately with remaining pizza sauce on the side.
- Store leftovers in a sealed container in the refrigerator.

- Cauliflower may be replaced with carrots, Brussels sprouts, cabbage, or parsnips.
- Pepperoni may be replaced with ham or your favorite pizza toppings.
