Pizza Meatloaf Sheet Pan Dinner Recipe

Ingredients

  • 2 heads cauliflower (or your favorite vegetable)

  • 6-8 small-medium potatoes
  • 1 Tbsp. extra virgin olive oil
  • 1/2 cup shredded mozzarella cheese
  • 2 lbs. grassfed ground beef
  • 1 egg
  • 1/2 cup milk or milk substitute
  • 1/2 cup quick oats
  • 1/2 cup shredded mozzarella cheese
  • 1 1/2 tsp. unrefined sea salt (Use the code kitchenstewardship for 15% off of your first purchase)
  • 1 tsp. garlic powder
  • 1 1/2 tsp. onion powder
  • 1 1/2 tsp. dried basil
  • 1 1/2 tsp. dried oregano
  • 2 Tbsp. non-fortified nutritional yeast (optional)
  • 1 tsp. desiccated liver powder (optional)
  • 1 tsp. multi-organs powder (optional)
  • 1 jar pizza sauce
  • pepperoni
  • 1 cup shredded mozzarella cheese

Instructions

  1. Heat oven to 400-degrees F.
  2. Chop cauliflower into florets and place on one end of a large baking sheet.
  3. Drizzle with 1 Tbsp. olive oil and season to taste with salt.
  4. Wash potatoes. Make 1/4-inch slices into potatoes, not cutting all the way through so the bottom stays intact. Make one slice in the opposite direction, not cutting all the way through.
  5. Place potatoes next to the cauliflower. Drizzle with 1 Tbsp. olive oil.
  6. In a large bowl, mix ground beef, egg, milk, oats, 1/2 cup cheese and seasoning. Mix until well combined.
  7. Place meat mixture in a round on the baking pan.
  8. Top the meat with 1 cup pizza sauce.
  9. Bake for 45 minutes.
  10. Remove pan from the oven.
  11. Open potatoes slightly and add seasoning (salt, garlic onion, basil, oregano to taste), a spoon of pizza sauce, and a sprinkle of shredded cheese.
  12. Top meatloaf with extra pizza sauce, 1 cup shredded cheese, and pepperoni.
  13. Return pan to oven. Bake 15-20 minutes, until cheese is melted and pepperoni is getting crisp.
  14. Serve immediately with remaining pizza sauce on the side.
  15. Store leftovers in a sealed container in the refrigerator.

Notes

  • Cauliflower may be replaced with carrots, Brussels sprouts, cabbage, or parsnips.
  • Pepperoni may be replaced with ham or your favorite pizza toppings.
